PESTO SAUCE:
- 2 Tbsp. pesto (I get mine at ALDI)
- 2 Tbsp. feta cheese
- 2 Tbsp. pine nuts (toasted, if you’d like – all it takes is 5 minutes at 350 degrees)
- 2 Tbsp. extra-virgin olive oil
- Sea salt and pepper to taste
Serve over zucchini noodles, or “zoodles”. Run your zucchini through a spiralizer. Using these instead of pasta are an easy way to get in another serving of greens so you can save your carbs for something more fun… like a great glass of wine to go with this meal
