Sweet Potato Goat Cheese Rounds
- 2-3 medium to large sweet potatoes
- 3 Tbsp. extra virgin olive oil
- 1 Tbsp. balsamic vinegar
- 2 tsp. honey
- 1 tsp. dijon mustard
- 2 oz. goat cheese
- craisins
- almonds or pecans, chopped
- rosemary leaves
Preheat oven to 400 degrees. Lay sweet potato rounds on a cookie sheet. Brush with olive oil, vinegar, honey, and mustard mixture. Bake for 15 minutes, remove and flip. Sprinkle with cheese, craisins, nuts and rosemary leaves. Continue to bake an additional 15 min or so until cheese is bubbly. Serve immediately.
