Red Quinoa with Veggies, Caramelized Onions, and Tofu

Ingredients:
- 1 C. red quinoa
- 2 C. caramelized onions
- 2 C. squash, zucchini, carrots or whatever you have on hand
- 4 C. tomato sauce
- 1 package sprouted tofu (press out water)
- Garlic
- Basil
- Tomato paste to taste
Cook quinoa according to directions on the package. While quinoa is cooking, in a large skillet sauté garlic, basil, and caramelized onions until translucent. Add veggies and sauté for about 5 minutes or until slightly softened. Add tomato sauce and put over medium heat. Add tofu and quinoa and simmer until everything is heated through. Serve by itself or over spinach for an added veggie serving.

Notes: Caramelized onions were made the night before and tofu had the water pressed out of it overnight in the fridge. You can add additional red or green as needed. (This made 6 one cup servings)
