These are so yummy! No refined sugar, no flour – just natural goodness! I’d still count them as a yellow “treat” if you’re on the Portion Fix plan, but rest assured these guys are packed with nutrients.
Sweet Potato Brownies
2 medium sweet potatoes, baked and mashed
3 eggs
¼ C. coconut oil
1/3 C. honey
1/4 tsp. vanilla
2 scoops Chocolate Shakeology
1/4 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. cinnamon
Sea salt to taste
1/3 C. mini chocolate chips
You can microwave your sweet potato, but I bake mine at 425 degrees for about 25-30 minutes. Let it cool a little bit before mashing. Next, preheat oven to 350 degrees. In a bowl, combine sweet potato, eggs, coconut oil, honey, and vanilla. Mix until blended. Add dry ingredients and chocolate chips. Pour into an 8×8 glass baking dish. Bake for 30-35 minutes. Cool. Cut into 12 pieces.
