Oven Roasted Broccoli
2-3 crowns of fresh broccoli
2 Tbsp. olive oil
2-3 tsp. garlic powder
1/3 C. Panko bread crumbs
Kosher salt to taste
Black pepper to taste
1/4 C. grated Parmesan cheese
Preheat oven to 425. Sprinkle Panko bread crumbs on a cookie sheet and toast for 2 minutes until lightly browned. Cut broccoli into florets and put them in a gallon ziplock bag. Add olive oil, garlic powder, toasted bread crumbs, salt and pepper. Shake to coat. Spread mixture on cookie sheet. Roast for 12-15 minutes or until broccoli is tender. Sprinkle with Parmesan and serve.
