Make a simple swap by replacing potatoes with cauliflower in your favorite potato salad recipe! I’m including the instructions for how I made it, but my guess is you could substitute Greek yogurt for the mayo to make it cleaner/healthier if desired.
One head cauliflower
6 hard-boiled eggs
2 stalks celery, chopped
1 small onion, diced
1 C. olive-oil based mayo
2 Tbsp. mustard
1 Tbsp. vinegar
1 Tbsp. sugar
Salt and pepper to taste
Dill to taste
Chop cauliflower into florets, microwave/steam for 7-10 minutes or until tender. Allow to cool. Meanwhile, combine other ingredients. Fold in cooled cauliflower, chill and serve.
