21 Day Fix Crock Pot Oatmeal

21 Day Fix Crock Pot Oatmeal

3 C. Steel-cut oats
1 1/2 C. water
1 1/2 C. unsweetened almond milk
3 Tbsp. flax seed
2 Tbsp. maple syrup
2-3 apples, chopped
1 1/2. tsp. cinnamon

Place all ingredients in a crock pot that has been sprayed with non-stick spray. Cook on low for 5-6 hours, or high for 2-3. What I did was cook on low for a few hours before bed then shut it off. In the morning, I turned the heat to high when I woke for another hour or so.

Serves 10, about 1 cup per serving. Leftover oatmeal can be stored in the refrigerator for up to 4 days, or frozen in individual portions.

About My 21-Day Fix (and 21 Day Fix Extreme) Challenge Group

Heads-Up: Our 21-Day Fix Challenge Group starts soon! This 21-day program is a virtual program that is run in a closed group setting (on Facebook) and lead by me, Coach Kim. Clean Eating Turkey and Black Bean Chili

Clean Eating Turkey and Black Bean Chili

1 tsp. extra virgin olive oil
1 lb. lean ground turkey
1/2 red pepper, chopped
1/2 yellow pepper, chopped (feel free to substitute green peppers)
1 onion, chopped
1 tsp. garlic, minced
1 small can green chiles, undrained
2 15-oz. cans diced tomatoes, undrained
2 15-oz. cans black beans, drained and rinsed
1 1/2 tsp. cumin
1 tsp. chipotle chile pepper (my favorite spice – I use McCormick)
Sea or himalayan salt to taste
Pepper to taste

Heat olive oil in a stock pot. Add peppers, onions, and ground turkey. Cook until turkey is no longer pink. Add garlic and remaining ingredients. Cover and simmer on low for 20-30 minutes. Garnish with cilantro and serve with Greek yogurt.

21 Day Fix Breakfast Scramble

Fill one container with a mixture of chopped veggies. I used onions and red peppers, along with about a teaspoon of minced garlic. Saute in olive oil until softened, about 3 minutes. Add two eggs and scramble. I seasoned with pepper, sea salt, and Italian seasoning. I also LOVE the free food list on 21 Day Fix. Add as much garlic and hot sauce as you want!

When I’m on the go, I like to have a stash of protein bars in my purse. Or, I pack them when I’m traveling so I always have something “healthy” when nothing else is available. However, protein bars are not all created equally. I was curious as to which ones are the healthiest, so I enlisted the help of my favorite app, Fooducate. I found that many of the most popular brands of protein bars are among the lowest-rated. They “earned” their low ratings by being highly processed and loaded with sugar. You can see the ratings of some of the most popular protein bar brands below, as well as the most highly-rated bars I could find (I did not see any A ratings).

Unfortunately, some of the highest-rated bars are not easy to find in stores. I hadn’t heard of a few of them. However, that doesn’t mean you can’t get them. The B+-rated Rise Protein Bars, Strong and Kind and Simply Protein Bars are available on Amazon.com with free shipping.

21 Day Fix Protein Bars

Most protein bars that you purchase in the stores are not nearly as healthy as you think. Even though they typically contain a lot of protein, they’re also often sugary and highly processed. The solution? Make your own! These are healthier, and 21 Day Fix approved.

2 C. rolled oats (old-fashioned, or steel-cut)
4 scoops Shakeology (I used vanilla)
3/4 C. unsweetened almond milk
1/2 C. almond butter

Pulse oatmeal and Shakeology in a blender. Add almond milk and almond butter, combine until wet dough is formed. Spread into the bottom of an 8×8 pan. Refrigerate, and cut into 8 pieces.

Clean Eating: Why small, frequent meals can backfire

Balancing Frequent (Clean) Eating with NOT Overeating

One of the main principles of clean eating is to eat small, frequent meals. The idea behind this is that it keeps your metabolism revved up at all times, helps even out sugar spikes, and your stomach isn’t stretched out with those big, heavy meals. That makes perfect sense to me. However, I think the “I have to eat every 2-3 hours” mentality can also be detrimental to those struggling to maintain balance with their eating habits. Here’s why:

Ultimately, there is no research that correlates smaller frequent meals alone to weight loss. There are some reasons why smaller, more frequent meals can lead to consuming more calories, but ultimately it’s calories that make the biggest difference. What you eat is also a factor. Eating small, frequent meals often leads to consuming too many calories if you’re not eating the right foods and eating when you’re not hungry. Bad eating habits can cause serious health issues. Why You Shouldn’t Skip Meals
