Spinach and hard-boiled eggs are a great basis for a healthy salad. Add other healthy ingredients you have on hand. I used cherry tomatoes and blue cheese crumbles, along with turkey bacon (which my daughter lovingly calls “fakin'”). Adapted from Fixate
Healthier Cobb Salad
- 2 C. spinach leaves
- 1 hard boiled egg, cut into quarters
- 1 slice turkey bacon
- 1 Tpsp. crumbled blue cheese
- Cherry tomatoes
- 2 Tbsp. Lemon dijon salad dressing (see below)
Container equivalents: 2 green, 1/2 red, 1/2 blue, 1 orange.
Lemon Dijon Salad Dressing
- 1 large egg yolk
- 1 Tbsp. dijon mustard
- 1/4. sea salt
- 4 Tbsp. lemon juice
- 1/4 c. extra virgin olive oil
- 1/2 tsp. ground black pepper
Blend egg yolk, mustard, salt, lemon juice, pepper in a food processor or blender until smooth. Slowly add oil until emulsified.
