This is one of my favorite salads. For me, the goat cheese and nuts are a must. Just don’t GO nuts adding them, as they’re calorie-dense. Add other ingredients to your liking. I also really like pears, craisins and red onions. You could also try strawberries, oranges, or tomatoes. It’s all good! Use this recipe as a starting point.
Salad Dressing:
1/2 C. extra virgin olive oil
1/4 C. balsamic vinegar
2 tsp. honey
Salt and pepper to taste
Salad Ingredients:
Arugula
Red onions, thinly sliced
Pears, thinly sliced
Toasted pecans or walnuts
Craisins
Goat Cheese
