Some of the best clean eating ideas I get come from our private challenge groups. In our 21-Day Fix group, Veronica shared this Healthy Baked Apple recipe with us. She writes, “I just cut the core out of the middle (it’s a small gala apple), put it in a small custard/Pyrex bowl. I sprayed 2 or 3 sprays of the butter spray, then sprinkled cinnamon, nutmeg, and a pinch of the unsweetened coconut on top. I didn’t measure those, I just kinda went on a whim. Then I popped it in the microwave for 3.5 minutes. It tasted just like the ones my mom used to make except she used real butter and brown sugar and stuff–amazing how similar it can still be without all of the added fat/sugar!”
