Cauliflower Crust Pizza with Spinach and Goat Cheese
This basic cauliflower crust recipe is delicious. I topped by pizza with spinach that had been wilted with olive oil and garlic, cherry tomatoes, goat cheese, a little Mozzarella and an egg to top it all off. Cauliflower Crust Pizza
Ingredients
- 1 head cauliflower
- 1 egg, large
- 1/2 cup Parmesan cheese, grated/shredded and not packed
- 1 tsp. minced garlic
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper

- Preheat oven to 425 degrees. Line a round pizza baking sheet with parchment paper or use a Silpat (I learned this the hard way! Your crust will stick to the pan if you don’t). Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 15 minutes. Transfer cauliflower to a large bowl and refrigerate, stirring occasionally, until cooled, about 15 minutes. Stir Parmesan cheese, egg, garlic, salt, and pepper into cauliflower until evenly incorporated. Pour mixture onto the prepared baking sheet; press and shape into a pizza crust. Bake in the preheated oven until lightly browned, about 15 minutes.
