Grocery prices have become ridiculous in recent years, making it even harder to eat healthy while on a budget. This week, we are combining budget-friendly shopping with health-conscious choices with the weekly ALDI specials for an exciting, delicious, and affordable menu. We’re using a variety of ALDI’s fresh produce and quality products to prepare frugal yet satisfying meals.
In this post, we’re sharing our handpicked recipes for each day, along with step-by-step instructions. This plan will guide you through a week’s worth of meals without breaking the bank. Let’s get cooking!
Sunday:
- Breakfast: Greek Yogurt with Frozen Strawberries and Mandarin Oranges
- Spoon Greek yogurt into a bowl.
- Top with a handful of frozen strawberries and peeled mandarin orange segments.
- Lunch: Black Bean and Feta Salad with Grilled Chicken Tenderloins
- Grill the chicken tenderloins, seasoned with salt and pepper, over medium heat until cooked through.
- Toss the Park Street Deli Black Bean and Feta Salad in a bowl. Serve with the grilled chicken.
- Dinner: Atlantic Cedar Plank Salmon with Riced Cauliflower and Steamed Asparagus
- Grill the Atlantic Cedar Plank Salmon as per the package instructions.
- Steam the asparagus until tender. Heat the riced cauliflower in a microwave or on the stovetop according to the package instructions.
Monday:
- Breakfast: Oatmeal topped with Papaya and Strawberries
- Cook oatmeal according to package instructions.
- Top with diced papaya and strawberries.
- Lunch: Greek Salad with leftover Grilled Chicken Tenderloins
- Toss the Park Street Deli Greek Feta Salad in a bowl. Top with sliced grilled chicken tenderloins.
- Dinner: Homemade Pizza with Fresh Salsa, Spinach, and Mozzarella on Mama Cozzi’s Dough
- Preheat oven as per the instructions on the pizza dough package. Roll out the dough onto a baking sheet.
- Spread fresh salsa as the base sauce, add a layer of baby spinach, and sprinkle mozzarella cheese. Bake as per the dough’s instructions.
Tuesday:
- Breakfast: Greek Yogurt with Mandarin Oranges
- Spoon Greek yogurt into a bowl.
- Top with peeled mandarin orange segments.
- Lunch: Leftover Homemade Pizza
- Simply enjoy the leftover pizza from the previous night’s dinner.
- Dinner: Grilled Chicken Tenderloin Wraps with Spinach, Bell Peppers, and Hummus
- Grill the chicken tenderloins, seasoned with salt and pepper, over medium heat until cooked through.
- Spread hummus on a whole grain wrap, add spinach, sliced bell peppers, and chicken. Roll up the wrap.
Wednesday:
- Breakfast: Avocado and Tomato on Whole Grain Toast
- Toast a slice of whole grain bread.
- Slice the avocado and tomato, and layer on the toast. Season with salt and pepper.
- Lunch: Greek Salad with Grilled Chicken Tenderloins (prepared ahead)
- Toss the Park Street Deli Greek Feta Salad in a bowl. Top with sliced grilled chicken tenderloins.
- Dinner: Atlantic Cedar Plank Salmon with White Rice and Steamed Asparagus
- Grill the Atlantic Cedar Plank Salmon as per the package instructions.
- Cook the white rice according to package instructions. Steam the asparagus until tender.
Thursday:
- Breakfast: Greek Yogurt with Papaya
- Spoon Greek yogurt into a bowl.
- Top with diced papaya.
- Lunch: Leftover Grilled Chicken Tenderloin Wraps
- Simply enjoy the leftover wraps from the previous night’s dinner.
- Dinner: Pasta with Fresh Salsa and Mozzarella
- Cook pasta according to package instructions.
- Drain pasta and mix with fresh salsa. Sprinkle mozzarella on top and let it melt slightly before serving.
Friday:
- Breakfast: Oatmeal with Strawberries
- Cook oatmeal according to package instructions.
- Top with strawberries.
- Lunch: Black Bean and Feta Salad with leftover Salmon (prepared ahead)
- Toss the Park Street Deli Black Bean and Feta Salad in a bowl. Top with flaked leftover salmon.
- Dinner: Homemade Pizza with Bell Peppers, Spinach, and Mozzarella on Mama Cozzi’s Dough
- Preheat oven as per the instructions on the pizza dough package. Roll out the dough onto a baking sheet.
- Spread fresh salsa as the base sauce, add a layer of baby spinach and bell peppers, and sprinkle mozzarella cheese. Bake as per the dough’s instructions.
Saturday:
- Breakfast: Greek Yogurt with Frozen Strawberries

Control is a pretty relevant topic right now. A lot of us may feel that life is spinning out of control a little bit more than usual. While we can’t control outside circumstances, we can control our reactions to them. And, our locus of control is key. When you think about health and fitness, how much personal control do you assume? Do you feel confident, empowered to pursue a more refined body image? Or, do you feel as if whatever you do will be sabotaged by external circumstances or situations? How you look at what you can do and your level of power determines your locus of control. Becoming a Certified Holistic Nutritionist
I want to become a certified holistic nutritionist! What advice do you have?
I get this question a lot. The first thing I ask is what that person’s goal is after they become certified. The truth is, many of us have a passion for learning about nutrition. It’s an interesting topic! But, unless you plan on developing that passion into a paying business, you don’t need a certification. There are so many free (or inexpensive) resources out there you can use to learn more. I think korucaredoula can guide you about the steps to become nutritionist.
A couple I’d start with:
Watch the videos on nutritionfacts.org. I trust them because they’re based on unbiased research. So many of the studies you find online and in articles are funded by special interest groups. Follow the money and you’ll see evidence of that.
Next, become an avid reader. I’ve learned so much more from reading books than I did with my certification. Here are some of my favorites:

Next, ask yourself how you will market your business. Most of the accreditation programs out there do NOT give you much support in this area, and this is the big differentiator in how your business will grow. I find that most women who want to become CHNs want to learn, but don’t necessarily like the sales/marketing part. Realize that no matter how much you learn and how good you are at your job, if you don’t like self-promotion you likely won’t earn money from it.
Basically, my advice is to get realistic about your motivation for wanting the certification. If you aren’t going to be using it to back up a full-time or part-time business, chances are you have better ways to spend your time and money. Going through a legit program is lots of work. You’ll have to read stuff you’re not entirely interested in to get your credentials, which means it’s a big investment of your precious time. Then, once you do get them, you’re not guaranteed a job. You’ll also have to invest in marketing your business, collecting testimonials, and then keeping that cycle going. This can be an expensive endeavor if you’re not savvy about it.
The level of your ability to deliver results to your clients will speak louder than your credentials. That’s one of the reasons I chose a lesser-expensive, six-month program over a longer one. I wanted to get a respected certification, but I also didn’t want to invest tons of money and time on it. I’ve had friends go through IIN (Institute for Integrated Nutrition) and end up following a different career path out of frustration for not being able to turn it into a business. That’s something to consider when weighing the price of your certification.

Veggie Lo Mein in the Instant Pot
Vegetable Lo Mein
1 garlic clove, minced
1Tbsp. sesame oil
8 oz Soba Noodles
1 C snow peas, trimmed
1 C broccoli florets
2 carrots peeled and sliced into matchstick-sized pieces
1 1/2 C vegetable broth
1 tsp. grated ginger
2 Tbsp. low sodium soy sauce
1Tbsp. oyster sauce
1 Tbsp. rice wine
1Tbsp. light brown sugar
Instructions
In a medium bowl, add vegetable broth, ginger, soy sauce, oyster sauce, rice wine and brown sugar. Whisk until evenly combined. Taste and adjust as needed. Set aside.
Add garlic and sesame oil to the inner pot within your Instant Pot. Set to saute function and when the pot is heated, cook garlic until lightly browned. Spread noodles across the bottom of the pot. Add vegetables on top.
Pour sauce into the pot.
Seal your Instant Pot and set to manual, high pressure, 5 minutes.
When Instant Pot is done cooking, do a quick release (do not do the natural release as it will cause your food to overcook).
When it is safe, remove the lid from Instant Pot. Initially, your noodles will look watery. Stir the noodles several times, breaking up any that may have clumped together during cooking. During this stirring, you should see that the water is quickly evaporating. Stir until all the water is gone. Dish out and serve.
NOTES
The vegetables are softer than if you were to make a stir-fried version. We like lots of veggies so I often lightly steam extra veggies and stir them in before serving. You can stir in cooked meat or shrimp at this time as well.
Other veggies that are good include mushrooms, cabbage and bok choy.

What is Barre?
You don’t have to be a dancer or even be a female to practice barre. The Barre format was created by Lotte Berk, a professional dancer. She suffered an injury, was doing physical therapy and finding it wasn’t effective for her. So, she created her own method for healing– which ended up as barre. It’s based in physical therapy, but has similarities to pilates in that tiny movements in the hardest part of the work zone (with no breaks). Barre classes typically place an emphasis on form, alignment and core engagement. Participants hold their bodies still while contracting specific, targeted sets of muscles in isometric exercises. That format creates an amazing transformation, no matter how fit you already are.
Who is Elise Joan?
You may know Elise Joan from 3-Week Yoga Retreat, but her first love is barre. She started taking ballet at the age of three, and began to experience joy through physical movement. She was born in Manhattan but grew up just outside of Washington, D.C. and began taking classes in Virginia where she danced as the Virginia Ballet Company as a principal soloist.
As a young adult, she attended the College of William and Mary in Virginia, starting out as a pre-med student. As a Freshman, she auditioned for Guys & Dolls and her love for musical theater started to blossom. After her junior year, she knew that she wanted to develop a career in that field and found her way to Broadway. After several years working as a performer on Broadway, she got some devastating news. An ENT doctor found polyps on her vocal cords, which became vocal nodes. In one doctor’s visit, her career ended. She was never able to work on Broadway again.
Sometimes when things go the opposite of the way we planned, it’s really a door open to new opportunity. She had a lot of alone time, was able to listen to herself, and had no idea what she was going to dow with her future. She saw that door open one day as she passed by a local yoga studio. She went in, and purchased a membership. She began to take yoga classes as a way of dealing with the emotions of the difficult time. Eventually, she got certified and was able to teach. That eventually lead her to creating 3-Week Yoga Retreat for Beachbody, and now Barre Blend.
I’m a Beginner. Can I do this?
YES! There are three levels of barre blend demonstrated in the videos: A modifier, a mid-level, and an intensifier. You can also make the moves harder/easier depending on how deep your bends are, as well as the type of weights you’re using. It would be appropriate for beginners through advanced levels. It is a no-impact to low-impact format.
